Ingredients

For the Meat

  • 1 ea Rack ribs, membrane removed
  • 1 part Liquid smoke
  • 2 part Water

For the Roasting

  • 1 can Lager beer
  • 2-3 ea Onions, quartered
  • 8 part Yellow mustard
  • 1 part Worcestershire sauce
  • BBQ seasoning rub (mild)
  • BBQ sauce

Instructions

  • Prep rack by removing membrane on backside of ribs
  • Dip rack in solution of liquid smoke and water, or spritz from spray bottle
  • Brush rack with mustard & Worcestershire sauce
  • Apply rub thoroughly to all sides of rack
  • Lay ribs in roasting pan, over bed of quartered onions; add beer to pan
  • Cover with foil. Cook at 325℉ for 3 ⅓ hrs
  • Clear off sheet pan. Discard beer & onions, then return rack to sheet pan, brush with BBQ, and refrigerate overnight
  • Grill to serving temp, brushing with a ½ sauce/½ water baste, charring meat.
