Prep rack by removing membrane on backside of ribs
Dip rack in solution of liquid smoke and water, or spritz from spray bottle
Brush rack with mustard & Worcestershire sauce
Apply rub thoroughly to all sides of rack
Lay ribs in roasting pan, over bed of quartered onions; add beer to pan
Cover with foil. Cook at 325℉ for 3 ⅓ hrs
Clear off sheet pan. Discard beer & onions, then return rack to sheet pan, brush with BBQ, and refrigerate overnight
Grill to serving temp, brushing with a ½ sauce/½ water baste, charring meat.
