Ingredients

  • 1 cup quinoa prepared
  • 1 cup chick peas prepared
  • .5 ea cucumber cubed
  • .25 ea red onion chopped or minced
  • .5 cup mint leaves fresh
  • .5 cup parsley leaves fresh
  • .5 cup feta cheese crumbled
  • .5 cup pistachios
  • 1 tbsp lemon juice
  • 2 tbsp olive oil extra virgin
  • salt & pepper kosher, fresh ground, to taste
