Quinoa & Chick Pea Salad
Ingredients
- 1 cup quinoa prepared
- 1 cup chick peas prepared
- .5 ea cucumber cubed
- .25 ea red onion chopped or minced
- .5 cup mint leaves fresh
- .5 cup parsley leaves fresh
- .5 cup feta cheese crumbled
- .5 cup pistachios
- 1 tbsp lemon juice
- 2 tbsp olive oil extra virgin
- salt & pepper kosher, fresh ground, to taste
