Ingredients

  • 156 gram Yellow Corn Meal
  • 120 gram All Purpose Flour King Arthur
  • 10 gram Baking Powder
  • 63 gram Granulated Sugar
  • 6 gram Sea Salt
  • 1 unit Egg
  • 250 ml Whole Milk
  • 40 gram Unsalted Butter, melted or shortening

Optional

  • 44 gram Mild Jalapenos, chopped & thoroughly drained Mazzetti's

Instructions

  • Preheat oven to 375F
  • Combine corn meal, flour, baking powder, sugar and salt until well mixed and no streaks remain.
  • Beat egg well, and add with milk
  • Pour milk & egg mixture into the dry ingredients, stirring until mixed.
  • Add melted butter (or shortening).
  • Transfer to well-greased shallow pan or muffin tins.
  • Add optional jalapenos, mixed in evenly.
  • Bake approx. 45 minutes in pan or iron skillet, or approx. 25 minutes for muffin tins. Baking time depends on the kind of pans used, how hot the pan is when you start, etc. You may have to experiment a little and make note of what time works best in which type of pan.
